Not much quilting has happened in my life for the past few weeks. I’ve been extra busy learning about a diabetic and heart-healthy diet to help a family member who’s been in denial about both of these health issues. The denial has ended and while they are working on regaining their health I am experimenting with recipes that meet these dietary needs – and that are also delicious.
It’s been quite the journey but I’ve discovered so many great resources. The American Diabetes Association in particular has an amazing “Food Hub” where you can find recipes that would please the pickiest of eaters (ask me how I know that ; )
Unstuffed Pepper Casserole
One recipe, in particular, is so good – I’ve made it twice in the past 2 weeks. I thought you might enjoy making it too. What’s the recipe? Unstuffed Pepper Casserole. It’s almost exactly like the name would suggest. Full of peppers, ground beef, brown rice and a low sodium marinara sauce (I used a tomato basil version) and covered with a layer of cheese. This one is a hit with everyone in the family.
Another feature of this Unstuffed Pepper Casserole recipe? It makes an entire 9 x 13 casserole dish of yummy goodness. After it cools – I cut it into 10 portions and individually wrap them for the freezer. Perfect for getting dinner on the table quickly so you can get back to stitching!
